Apicius Prize for Study on nudging restaurant guest toward more sustainable consumption

Two former master's students from CBS, Sofie Voss and Helena Andre, and their thesis supervisor Florian Kock won the Apicius Prize of the Alliance for Research on Wine & Hospitality Management for the best conference paper. The alliance consists of a network of leading hospitality schools such as Cornell, Kedge, Hong Kong Polytechnic, or Bolzano.

The award-winning study emerged from their thesis (graded 12) and is based on a large field experiment conducted at various restaurants in Denmark, experimentally demonstrating that psychology-grounded nudges can increase actual vegetarian food options by more than 32%. Their study has also been featured in international media and requests by the industry to conduct workshops on this important topic.
